Try this mouthwatering curry recipe:
Kingklip Thai Red Curry
Serves: 4
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Ingredients
3 tbsp coconut oil
1 red onion, sliced
1 red pepper, cut into thin strips
extra-fine green beans
80g Thai green curry paste
400ml coconut milk
600g Sea Harvest Kingklip Fillet Cuts
200g baby pak choi
15g basil leaves
100g peanuts, toasted and roughly chopped
6 tbsp coriander, roughly chopped
2 thinly sliced spring onion stalks
cooked jasmine rice, to serve
Method
1. Heat the coconut oil over a medium heat in a wok. Add the onion, pepper and green beans, and fry for 2 minutes. Reduce heat slightly, add the curry paste and cook for another 2 minutes, coating the vegetables in the paste.
2. Add the coconut milk and stir through. Carefully place the Sea Harvest Kingklip Fillet Cuts in the curry and cook until tender. This will take about 10 minutes if the fish is still frozen. Add the pak choi and simmer for 2 minutes.
3. Add the basil leaves and turn off the heat, stirring the leaves through the curry. Add the peanuts, coriander and spring onions. Serve over sticky jasmine rice.
