Opposite to what you may have thought, the best-by date may not be the most accurate sign of the eggs’ freshness. Namely, the FDA doesn’t require of egg producers to mark their cartons with this date, so, this is a choice of the manufacturers themselves.
Therefore, the next time you’re buying eggs, don’t look at the best-by date, but look at the other label right under the best-by date. The label is consisted of a number known as the Julian Date, and this number indicates the date when the eggs were put in the carton. That is, if the label has the number 358, the eggs were packaged on the December 24th. If you bought eggs with this number on January 20th, the eggs are at least 26 days old.
According to the Food Safety and Inspection Service, when kept in the fridge at 45 degrees Fahrenheit, the eggs should be good for 4 to 5 weeks after the Julian Date.
