Your family won’t get enough of these scrumptious Easter brunches! Prepare something light yet filling and absolutely delicious for family and guests to tide them over until the Easter-egg hunt and lunch!
1. Banana crumpets
The kids will absolutely love these fluffy, warm banana crumpets. Not only will they fill their tummies but the bunny theme will also fit in perfectly with Easter. Serve with extra whipped cream, maple syrup, honey or chocolate chips for an extra-decadent treat!
2. Tomato & goat’s cheese quiche
If you feel like a savoury brunch to counteract all those chocolate eggs, a quiche might be the perfect light yet filling choice for brunch. The tangy flavours of tomato and goat’s cheese will be delicious for a cosy autumn brunch. This delicious quiche is so hearty that you can serve it as the main brunch dish, accompanied by fresh fruit, yoghurt and muffins. Brunch sorted!
3. Nutella & banana on kitke
Okay, we realise that the entire Easter weekend will probably be chocolate overload – but how could we resist the gooey deliciousness of Nutella and banana on cripsy, toasted kitke bread? Thought so – you wouldn’t be able to resist either and the kids will absolutely love it!
4. Leek-rarebit tartlets
This is another savoury brunch idea that we simply can’t resist – a creamy combination of leek and cheesy sauce on puff pastry. You can save time on Easter Sunday by making the filling and dressing a day ahead, and assembling and baking the tartlets just before serving.
5. Green eggs and ham
Brunch wouldn’t be brunch without croissants and eggs. And this boiled-egg mixture with pesto and mayo, served with ham and fresh rocket on delicious, flaky croissants certainly gets our vote! You could even make and refrigerate the egg mixture the night before, and toast and assemble the croissants right before serving to save some time. Yum!
