Zoodles & meatballs
SALLY-ANN’S TIP: ‘It’s good to use fatty mince rather than lean or extra-lean mince in order to get the healthful fats from this meal. While zoodles are devoid of fat, a well-balanced low-carb meal will always have some healthy fat present. If you only have lean mince, you can always add extra fat to the dish to make it more succulent.’
Cabbage Carbonara
SALLY-ANN’S TIP: ‘Choosing fattier bacon, as opposed to lean, is going to give you that magnificent fat from which lard comes. Fatty bacon will help you absorb fat-soluble nutrients, it adds more protein to a dish that doesn’t have that much protein and, of course, it imparts a delicious taste.’
Coconut Thai green chicken curry
SALLY-ANN’S TIP: ‘This curry can be made with any animal protein, but seems to go best with chicken, pork or fish for a more authentic Thai dish. The coconut milk, rich in lauric acid, also presents a very distinctive taste, often found in oriental cooking. It’s really good for you and, because it’s lactose-free, those who are intolerant to dairy can still experience that rich, creamy flavour without the side effects of cow’s milk.’
Fish pie
SALLY-ANN’S TIP: ‘Oily fish like pilchards are typically cold, deep-water fish, which means they will be rich in omega-3 fatty acids DHA and EPA. These are anti-inflammatory and wonderful for mood and brain function.’
Cauliflower rice with roast vegetables & chicken
SALLY-ANN’S TIP: ‘Using just a little honey here is quite okay – it’s just 2 teaspoons to impart extra flavour to a dish that can feed 6 people. Sometimes a teensy bit of something like this is perfectly acceptable in a dish, and makes all the difference.’
