Here is a recipe for a batch of delicious buttercream cupcakes that you can make with the Le Creuset Cupcake Baking Set. Spoil Mom on the day with the set as well as the cupcakes!
Buttercream Cupcakes Recipe
Makes 12
Ingredients for the cupcakes:
250g butter, softened
250g castor sugar
4 free-range eggs
250g self-raising flour
Ingredients for the buttercream icing:
140g butter, softened
280g icing sugar
2 tsp milk, optional
2 tsp gel food colouring
Method for the cupcakes:
1. Preheat oven to 180°C and line the Le Creuset 12-Cup Muffin Tray with paper cases.
2. Cream the butter and castor sugar until pale and fluffy.
3. Gradually beat in the eggs until well combined.
4. Sift in the flour and fold to combine.
5. Pour mixture into the cases until three-quarters full.
6. Bake for 10 to 12 minutes or until golden and cooked through. Allow to cool on a wire rack.
Method for the buttercream icing:
1. Beat the butter in a large bowl until soft.
2. Gradually add the icing sugar and continue beating until well combined and fluffy.
3. Add the milk, if necessary, until the mixture is smooth and creamy.
Method to assemble the icing and the cupcakes:
1. Prepare your pastry bag with a star nozzle and fold down the edges of the bag.
2. Using a paintbrush, paint a few vertical lines of gel food colouring along the inside of the bag.
3. Spoon buttercream icing into the bag. Twist the pastry bag and give it a test pipe onto a clean surface.
4. Pipe buttercream in circular motions around each cupcake.
